Chilli and Apple Marinated Pork

A beautiful marriage of pork and apple with a mustard and chilli twist. This marinade is perfect for any meat or fish, just chuck it in the griddle pan or on the BBQ. Cutting off the fat and keeping the pork steaks lean cuts out loads of calories and makes this only 154 calories per serving.

Chilli and apple marinated pork

Ingredients

  • 2 lean pork slices
  • 1 tbsp cider vinegar
  • 1 clove garlic, crushed
  • 1 red chilli, finely sliced
  • 1 tbsp grain mustard
  • 1 tbsp apple sauce
  • 1 tbsp freshly chopped mint
  • 1 tbsp freshly chopped parsley
  • salt and freshly ground black pepper

Cooking Instructions

  1. Season the steaks on both sides with salt and black pepper. Place the marinade ingredients together in a bowl and mix well. Add the steaks and coat on all sides. Cover and chill until required. Remove from the refigerator 30 minutes before cooking.
  2. Preheat a health grill or conventional grill for 5 minutes, Cook the steaks for 8 minutes on the health grill or 5-7 minutes each side under a conventional grill or until cooked to your taste.
  3. Serve with rosemary roasted new potatoes and vegetables.

Tips

Leave the steaks marinating in the refrigerator overnight for a fuller flavour.

Great done with balsamic vinegar instead of cider vinegar and excellent cooked on the BBQ ! Also works very well with chicken.
