Chilli and apple marinated pork

Ingredients
- 2 lean pork slices
- 1 tbsp cider vinegar
- 1 clove garlic, crushed
- 1 red chilli, finely sliced
- 1 tbsp grain mustard
- 1 tbsp apple sauce
- 1 tbsp freshly chopped mint
- 1 tbsp freshly chopped parsley
- salt and freshly ground black pepper
Cooking Instructions
- Season the steaks on both sides with salt and black pepper. Place the marinade ingredients together in a bowl and mix well. Add the steaks and coat on all sides. Cover and chill until required. Remove from the refigerator 30 minutes before cooking.
- Preheat a health grill or conventional grill for 5 minutes, Cook the steaks for 8 minutes on the health grill or 5-7 minutes each side under a conventional grill or until cooked to your taste.
- Serve with rosemary roasted new potatoes and vegetables.
Tips
Leave the steaks marinating in the refrigerator overnight for a fuller flavour.
