Chilli Tofu Stir-fry with Noodles

Tofu is a great versatile and protein rich food and very low in fat. Served on it's own it can be bland but in recipes, tofu soaks up any flavours added to it so the spicy Thai paste in this recipe really help to lift the dish. Make sure you buy pressed tofu for this recipe to make sure it holds together. 218 calories and 1.6% fat

Chilli tofu stir-fry with noodles

Ingredients

  • 200g block tofu
  • 100g fine noodles
  • 2 red onions, finely sliced
  • 2 garlic cloves, crushed
  • 1 red pepper, deseeded and finely sliced
  • 1 tsp green Thai curry paste
  • 175g mangetout
  • 3 tbsps orange juice
  • 1 tbsp soy sauce
  • 250g beansprouts
  • oil spray, for the pan
  • salt and freshly ground black pepper

Cooking Instructions

  1. Cut the tofu into cubes and place on kitchen paper to drain.
  2. Heat a non-stick wok, then lightly spray with oil and add the tofu, browning it on all sides and seasoning with salt and black pepper. Remove the tofu to a plate and set aside.
  3. Cook the noodles in boiling water, then drain.
  4. Return the wok to the heat and add the onions and garlic. Cook for 1-2 minutes, then add the red pepper and curry paste. Stir in the mangetout, orange juice and soy sauce and toss well together. Add the beansprouts and noodles, combining well.
  5. Just before serving, add the tofu. Serve with a large salad.

Tips

Dry the tofu well on kitchen paper before using as this will help it crisp up during cooking.
