Chilli tofu stir-fry with noodles

Ingredients
- 200g block tofu
- 100g fine noodles
- 2 red onions, finely sliced
- 2 garlic cloves, crushed
- 1 red pepper, deseeded and finely sliced
- 1 tsp green Thai curry paste
- 175g mangetout
- 3 tbsps orange juice
- 1 tbsp soy sauce
- 250g beansprouts
- oil spray, for the pan
- salt and freshly ground black pepper
Cooking Instructions
- Cut the tofu into cubes and place on kitchen paper to drain.
- Heat a non-stick wok, then lightly spray with oil and add the tofu, browning it on all sides and seasoning with salt and black pepper. Remove the tofu to a plate and set aside.
- Cook the noodles in boiling water, then drain.
- Return the wok to the heat and add the onions and garlic. Cook for 1-2 minutes, then add the red pepper and curry paste. Stir in the mangetout, orange juice and soy sauce and toss well together. Add the beansprouts and noodles, combining well.
- Just before serving, add the tofu. Serve with a large salad.
Tips
Dry the tofu well on kitchen paper before using as this will help it crisp up during cooking.
