This colourful crunchy chilli prawn stir-fry recipe is virtually fat free and really speedy to prepare. And for anyone who thinks all you can eat on a Rosemary Conley diet is a Ryvita and a lettuce leaf then try this - it makes an absolutely MAMMOTH portion and is tasty and filling to boot! 208 calories and 0.5% fat.

Chilli prawn stir fry

Ingredients

  • 150g fresh prawns
  • 1/2 each red and green pepper, chopped
  • 5 button mushrooms cut in half
  • 1 celery stick, chopped
  • 1/2 red onion, chopped
  • 1 small courgette, chopped
  • 1/2 pack fresh beansprouts (or 1 whole can)
  • 2 tsps Thai sweet chilli dipping sauce
  • soy sauce to taste

Cooking Instructions

  1. Pre-heat a non-stick wok or frying pan and dry fry the prawns.
  2. When the prawns have changed colour, add the peppers, mushrooms, celery, onion, courgette and beansprouts.
  3. Take care not to overcook the prawns
  4. Just before serving add the sweet chilli dipping sauce and soy sauce to taste
