Chicken with wild mushrooms

Ingredients
- 400g skinless chicken breasts, diced
- 1 onion, chopped
- 1 clove garlic, crushed
- 1 tbsp ground coriander
- 50g dried mushrooms, soaked overnight in boiling water
- 1 tbsp light soy sauce
- 300ml chicken stock
- 300g small potatoes, halved
- 1 tbsp chicken gravy granules
- chopped chives, to serve
Cooking Instructions
- Preheat a non-stick saucepan. Dry fry the onion and garlic until soft. Add the chicken and coriander and cook for 1-2 minutes drizzling with the soy sauce.
- Add the mushrooms including the liquid, stock and potatoes, and bring to a gentle simmer. Cook for 55 minutes in the saucepan or in a slow cooker. Thicken the sauce with 1 tablespoon chicken gravy granules.
- Serve with steamed vegetables.
Tips
Rinse the dried mushrooms well to remove any traces of sand. To make this a complete meal stir in 200g frozen broad beans 5 minutes before serving.
