Chicken or Quorn in Mushroom Sauce

This really quick low-fat chicken and mushroom sauce recipe is so simple and easy to prepare and makes a super tasty supper for one at 267 calories and 0.8% fat. Using condensed soup for the sauce is a canny cheats shortcut and keeps all the flavour. Serve with mashed potato and veg to bring the calories up to 400.

Ingredients

  • 100g chicken breast (no skin), chopped or Quorn alternative
  • ½ onion, chopped
  • 6 button mushrooms
  • 100g Batchelors Low Fat condensed Mushroom soup
  • 1 Yellow portion pot (100g) Mashed sweet potato

Cooking Instructions

  1. Dry-fry 100g chopped chicken breast (no skin) or Quorn alternative with ½ chopped onion and 6 button mushrooms.
  2. When the chicken is almost cooked, add 100g Batchelors Low Fat Condensed Mushroom Soup, plus milk from allowance if necessary to make a creamy sauce.
  3. Simmer until the chicken is completely cooked.
  4. Serve with 1 Yellow Portion Pot (100g) mashed sweet potato, plus other vegetables of your choice.
