Chicken and paprika rissoles

Ingredients
- 400g minced chicken
- 1 red onion, finely chopped
- 1 garlic clove, crushed
- 1 tsp smoked paprika
- 2 tbsp fresh parsley, chopped
- 2 tsps vegetable stock powder
- 1 tbsp spicy mango chutney
- black pepper
Cooking Instructions
- In a large bowl, mix together 400g minced chicken, 1 finely chopped red onion, 1 crushed garlic clove, 1 tsp smoked paprika, 2 tbsps chopped fresh parsley, 2 tsps vegetable stock powder and 1 tbsp spicy mango chutney and season with black pepper.
- Divide the mixture into 8 equal-sized pieces then, using wet hands, shape each piece into a ball and place on a non-stick baking tray.
- Bake in a preheated oven at 200C, 400F, Gas Mark 6 for 20 minutes.
- Serve hot with a mixed salad and some mango chutney and mint yogurt on the side.
Tips
The smoked paprika gives these rissoles a real kick.
