Ingredients
- 1 medium onion, diced
- 100g cooked chicken, chopped
- 4 x red portion pots cooked rice
- 150ml vegetable stock
- 1 egg
- 1 red portion pot frozen peas
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
Cooking Instructions
- Preheat a non-stick pan and dry-fry the onion until soft.
- Add the chicken and rice, tossing well together.
- Pour in the stock and bring to the boil. Simmer to drive off the stock until the mixture is dry.
- Beat the egg in a bowl and stir into the rice, along with the peas.
- Season with soy and oyster sauces. When the egg is just cooked, pile into a serving bowl.
