Ingredients

  • 1 medium onion, diced
  • 100g cooked chicken, chopped
  • 4 x red portion pots cooked rice
  • 150ml vegetable stock
  • 1 egg
  • 1 red portion pot frozen peas
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce

Cooking Instructions

  1. Preheat a non-stick pan and dry-fry the onion until soft.
  2. Add the chicken and rice, tossing well together.
  3. Pour in the stock and bring to the boil. Simmer to drive off the stock until the mixture is dry.
  4. Beat the egg in a bowl and stir into the rice, along with the peas.
  5. Season with soy and oyster sauces. When the egg is just cooked, pile into a serving bowl.
