A lovely low fat recipe for the Mexican favourite chicken fajitas but at a fraction of the fat and calories.

Chicken & pepper fajitas

Ingredients

  • 1 red onion, chopped
  • 1 garlic clove, crushed
  • 2 small skinless chicken breasts, chopped
  • sprig of fresh thyme
  • 1 tbsp soy sauce
  • 1 red pepper, deseeded and diced
  • 1 green pepper, deseeded and diced
  • 1-2 tbsps fajita spice mix
  • 4 white tortillas

Cooking Instructions

  1. Heat a non-stick frying pan and dry-fry the onion and garlic until soft.
  2. Stir in the chicken and thyme and cook for 1-2 minutes, drizzling the soy sauce over the chicken.
  3. Add the peppers and fajita mix to the pan, stirring well and moving the ingredients around the pan so that the chicken gets coated with the spices.
  4. Once the chicken is fully cooked, remove the pan from the heat and spoon the chicken mixture onto the tortillas. Add toppings of your choice, then fold in the ends of the torillas, roll up and serve immediately.

Tips

Adding a little soy sauce to the chicken keeps it moist during cooking.
