Ingredients
- 2 onions, diced
- 2 garlic cloves, chopped
- 3 skinless chicken breasts, cut into dice
- 1-2 tsps chicken stock powder
- 600ml chicken stock
- 2 tsps ground coriander
- 1 tsp fennel seed
- 1 small fresh red chilli, chopped
- seeds from 4 crushed cardamom pods
- 100g red lentils
- 2 tbsps tomato puree
- salt and freshly ground black pepper
Cooking Instructions
- Heat a non-stick wok or frying pan then dry-fry the onions and garlic until soft and lightly coloured. Add the spices and continue to cook for a further 2 minutes.
- Add the diced chicken and seal the outside of the meat, seasoning with salt and black pepper, before adding the remaining ingreients.
- Reduce the heat and allow the mixture to simmer gently for about 20 minutes as the sauce thickens.
- Serve with a mini low-fat naan bread (max 5% fat and 150 kcal) and 1 tsp mango chutney per person.
