Ingredients

  • 2 onions, diced
  • 2 garlic cloves, chopped
  • 3 skinless chicken breasts, cut into dice
  • 1-2 tsps chicken stock powder
  • 600ml chicken stock
  • 2 tsps ground coriander
  • 1 tsp fennel seed
  • 1 small fresh red chilli, chopped
  • seeds from 4 crushed cardamom pods
  • 100g red lentils
  • 2 tbsps tomato puree
  • salt and freshly ground black pepper

Cooking Instructions

  1. Heat a non-stick wok or frying pan then dry-fry the onions and garlic until soft and lightly coloured. Add the spices and continue to cook for a further 2 minutes.
  2. Add the diced chicken and seal the outside of the meat, seasoning with salt and black pepper, before adding the remaining ingreients.
  3. Reduce the heat and allow the mixture to simmer gently for about 20 minutes as the sauce thickens.
  4. Serve with a mini low-fat naan bread (max 5% fat and 150 kcal) and 1 tsp mango chutney per person.
