Oxtail has become very popular in fashionable restaurants recently but it's a great economical dish to prepare at home. This Rosemary Conley recipe is simple to cook and really tasty, especially when done in a slow cooker. Ingredients

  • 400g beef oxtail
  • 1 red onion, diced
  • 2 large carrots, diced
  • pinch fresh thyme
  • 100g swede, chopped
  • 1 tbsp gravy granules
  • 1 tbsp tomato puree
  • 500ml beef stock
  • salt and black pepper

Cooking Instructions

  1. Dry-fry the onion in a non-stick pan until soft, add the beef and continue to cook sealing the beef until brown, add the remaining ingredients, stirring well.
  2. Simmer gently for 1½ hours until the beef is tender and the gravy thickened. Serve with mashed or jacket potato.

Tips

Serve this as a hearty casserole or blend for a tasty soup.
