Braised Beef with Peppers

A lovely recipe to cook a relatively cheap cut of braising beef. A long cooking time in the saucepan, slow cooker or oven, tenderises the meat making it deliciously tasty but keeps the fat and calories low. 334 calories per serving.

Ingredients

  • 1 red onion, chopped
  • 2 garlic cloves, crushed
  • 450g lean braising steak
  • 1 yellow pepper, deseeded and diced
  • 300ml tomato passata
  • 1 tbsp gravy granules
  • salt and freshly ground black pepper
  • fresh parsley to garnish

Cooking Instructions

  1. Heat a non-stick pan and dry-fry the onion and garlic until soft. Add the beef and continue cooking to seal the meat.
  2. Add the remaining ingredients and mix well, adding up to 300ml of water depending on the thickness of the passata.
  3. Cover with a lid and simmer gently for at least 40 minutes until the meat is tender.
  4. Garnish with parsley and serve with steamed mixed vegetables (excluding potatoes)

Tips

You can cook this recipe in a slow cooker or electric wok.
