Ingredients
- 400g lean beef mince
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1 tbsp Balti curry paste
- 1 small red chilli, chopped
- 1 tbsp freshly chopped parsley
- 1 tbsp gravy granules
- 2 tsps tomato puree
- 600g sweet potatoes, peeled and sliced
- 1 egg
- 2 tbsps semi-skimmed milk
- 300ml water
- salt and freshly ground black pepper
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6. Dry-fry the mince until lightly browned.
- Tip the mince into a sieve to drain off the fat. Return to the pan adding the red onion and garlic and cook for a further 3-4 minutes, adding the Balti paste and chilli while they cook.
- Add the parsley with 300ml water and bring to a gentle simmer. Add the gravy granules and tomato puree and continue to simmer for 20 minutes to allow the sauce to thicken. Check the seasoning then transfer to an overproof dish.
- Cover with the sliced potatoes and season with salt and black pepper. Beat the egg with the milk and pour over the top. Bake in the top of a preheated oven for 30 minutes, until golden brown. Serve with a selection of freshly cooked vegetables.
Tips
For a lighter dish replace half the beef mince with Quorn Mince.
