Ingredients

  • 4 pieces Bury's low fat Black Pudding
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 200g Arborio risotto rice
  • 1 litre vegetable stock
  • 1 tbsp freshly chopped parsley
  • black pepper

Cooking Instructions

  1. Chop the black pudding into chunky pieces. In a non-stick pan dry-fry the onion and garlic until soft.
  2. Add the black pudding and cook for 1-2 minutes before adding the rice and gradually stirring in the stock 150ml at a time. Each time the stock is absorbed, stir in a little more.
  3. Repeat until all the stock has been absorbed and the rice is fully cooked. Season with black pepper.
  4. Transfer to serving plates and garnish with a little freshly chopped parsley.

Tips

Substitute the black pudding for bacon if you prefer.

Thanks Dean. I've just cooked the recipe & it was absolutely delicious!! I would never have thought of using black pudding in a risotto but it was a sure-fire success!

Hi Lynda, Thanks for your comments. We've stated 4 pieces because that's the pack size for the Bury's black pudding (which would be the one we would recommend to use here and as far as we know the only one which is low-fat) We would normally state a weight in all other circumstances but I will pass your comments onto the recipe department (Dean!)

I have researched this product, it is Burys black pudding not berrys. You can buy it online or all the major supermarkets stock it. They do not advertise it as a low fat product (missing a trick there I think!!) This is delicious although the portion was plenty for me my husband had double.
