Ingredients
- 2 red onions, diced
- 2 garlic cloves, crushed
- 450g lean diced beef
- 1.2 litres beef stock
- 1 tbsp gravy granules
- 10g dried wild mushrooms
- 450g small new potatoes
- 2 celery sticks, chopped
- 1 turnip, peeled and diced
- 1 tbsp mixed herbs (eg parsley, thyme, chives)
- salt and freshly ground black pepper
Cooking Instructions
- Heat a non-stick frying pan and dry-fry the diced onions and garlic until the onions start to brown.
- Add the beef to the pan, season with salt and black pepper and cook until beef is sealed.
- Stir in the meat stock, then add the granules and the remaining ingredients, cover and simmer gently for 1 hour or until the meat is tender.
- Serve with green vegetables.
Tips
Dried wild mushrooms are a great store cupboard standby to pep up sauces and casseroles.
