Beef and red onion kebabs

Ingredients
- 450g lean diced beef steak
- 2 medium red onions
- 1 red pepper, deseeded and diced
- FOR THE MARINADE
- 2 garlic cloves, crushed
- 2 tbsps soy sauce
- 1 tbsp sweet chilli sauce
- 1 tbsp chopped fresh chives
- freshly ground black pepper
Cooking Instructions
- Trim away any traces of fat from the beef, then season generously with black pepper.
- Cut the red onions into wedges, then thread the beef, onions and red pepper on to 4 skewers and place in a shallow dish.
- Mix together the ingredients for the marinade and pour over the kebabs. Allow to marinate for 1 hour or longer.
- Preheat the grill to high. Place the kebabs on a baking tray and grill for 2-3 minutes on each side until cooked to your liking.
- Serve with 150g boiled new potatoes (with skins) per person and unlimited salad or boiled or steamed vegetables.
Tips
Choose lean beef with as little fat marbling as possible and marinate overnight for added flavour. Marinating time - 1 Hour
