Beef and pepper stir-fry

Ingredients

  • 1 lean beef steak, cut into strips
  • 1 green pepper, deseeded and diced
  • 1 garlic clove, crushed
  • 1 tbsp chopped fresh mint
  • 2 handfuls beansprouts
  • 1 tbsp chopped fresh parsley
  • 1 tbsp soy sauce
  • salt and freshly ground black pepper

Cooking Instructions

  1. Preheat a non-stick wok.
  2. Season the beef steak with salt and black pepper.
  3. Heat a non-stick pan and stir-fry the green pepper and garlic for 1-2 minutes, then add the beef and cook for 5-10 minutes.
  4. When the beef is cooked , add the remaining ingredients and toss well.
  5. Serve with 1 red Portion pot (144g dry weight) cooked basmati brown rice, plus salad or vegetables (excluding potatoes).
