Beef and pepper stir-fry

Ingredients
- 1 lean beef steak, cut into strips
- 1 green pepper, deseeded and diced
- 1 garlic clove, crushed
- 1 tbsp chopped fresh mint
- 2 handfuls beansprouts
- 1 tbsp chopped fresh parsley
- 1 tbsp soy sauce
- salt and freshly ground black pepper
Cooking Instructions
- Preheat a non-stick wok.
- Season the beef steak with salt and black pepper.
- Heat a non-stick pan and stir-fry the green pepper and garlic for 1-2 minutes, then add the beef and cook for 5-10 minutes.
- When the beef is cooked , add the remaining ingredients and toss well.
- Serve with 1 red Portion pot (144g dry weight) cooked basmati brown rice, plus salad or vegetables (excluding potatoes).
