Ingredients
- Basic pancake batter to make 8 small pancakes
- 1 red onion, chopped
- 1 clove garlic, crushed
- 2 lean rump steaks (350g)
- 1 red pepper, deseeded and diced
- 1-2 tbsps fajita spice mix
- 1 tbsp soy sauce
- pot low-fat yogurt
Cooking Instructions
- Preheat a non-stick frying pan and dry-fry the onion and garlic until soft. Add the beef, cooking for 1-2 minutes. Add the peppers, fajita mix and soy sauce and move round the pan, coating with the spices.
- Once the beef is cooked to your liking, remove from the heat. Spread the pancakes with yogurt then fill with the beef mixture and serve.
