Beef meatballs with lemon sauce

Ingredients

  • For the meatballs:
  • 400g lean beef mince
  • 1 large red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tsp vegetable stock powder
  • 1 tbsp finely chopped basil leaves
  • freshly ground black pepper
  • For the lemon sauce:
  • 1 x 400g can chopped tomatoes
  • 1 tsp vegetable stock powder
  • 1 tsp fine lemon zest
  • 1 tbsp chilli sauce

Cooking Instructions

  1. Put all the meatball ingredients into a mixing bowl and mix well by hand or, for a finer mix, place in a food processor and blend well. Divide the mixture into 20 golf-ball-sized balls.
  2. Preheat a non-stick pan and then dry-fry the meatballs, browning them on all sides. Add the chopped tomatoes, vegetable stock powder, lemon zest and chilli sauce and season with black pepper. Simmer for 20 minutes, adding water if required.
  3. Divide the meatballs and sauce between 4 plates and serve with 1 yellow Portion Pot (100g) mashed sweet potato per person and unlimited steamed green vegetables.

Tips

For lighter meatballs, use half beef mince and half Quorn mince.
