Ingredients
- 1 red onion, diced
- 250g beef rump steak, cut into strips
- 2 garlic cloves, crushed
- 1 tsp garam masala
- 200ml reduced-fat coconut milk
- 1 tsp vegetable stock powder
- 1 tsp tomato purée
- 200ml 2% fat Greek yogurt
- 1 tbsp chopped fresh coriander
Cooking Instructions
- 1 Preheat a non-stick wok until hot. Add the diced onion and cook until lightly browned before adding the beef strips, garlic and garam masala.
- 2 When the beef is sealed, stir in the coconut milk, stock powder and tomato purée. Simmer for 10 minutes, then remove the wok from the heat and stir in the yogurt. Just before serving add the chopped coriander.
- 3 Serve with 1 blue Portion Pot® (55g dry weight) boiled brown basmati rice per person.
