Barbecued Garlic Chicken

Ingredients

  • 4 skinless chicken breasts (400g total)
  • salt and freshly ground black pepper
  • For the Marinade
  • 2 tbsps sweet chilli sauce
  • 2 tbsps runny honey
  • 1 tbsp worcestershire sauce
  • 2 garlic cloves, peeled and chopped
  • 1 red onion, finely chopped
  • pinch of fennel seeds

Cooking Instructions

  1. Combine the marinade ingredients in a mixing bowl.
  2. Season the chicken breasts with salt and black pepper and place in the bottom of an ovenproof dish. Spoon the marinade over the chicken and leave to marinate for at least 1 hour.
  3. Cook under a preheated grill or on a preheated barbecue for 25-30 minutes until cooked through to the centre.
  4. Serve straight away with a selection of fresh vegetables or salads.
