Balsamic Pork with Apple Wedges

A lovely roast pork recipe using lean pork fillet. Basting the pork in balsamic vinegar and covering the meat with pepper and apple quarters keeps the meat lovely moist and juicy. 164 calories per serving and an incredible 1.4% fat. Delicious!

Balsamic pork with apple wedges

Ingredients

  • 4 small pieces pork fillet, skin removed
  • 2 tbsps good-quality baklsamic vinegar
  • 1 red onion, finely chopped
  • 2 garlic cloves, sliced
  • 2 fresh sage leaves
  • 2 red peppers, deseeded and cut into quarters
  • 2 eating apples, quartered and placed in salt water
  • 150ml water
  • 2 tbsps chopped fresh parsley
  • salt and freshly ground black pepper

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Place the pork fillet in a non-stick roasting tray. Drizzle the balsamic vinegar over the pork, sprinkle with the chopped onion and sliced garlic and season with salt and black pepper.
  3. Add the sage leaves, red pepper and apple quarters. Pour 150ml of water into the base of the roasting tray.
  4. Roast in the centre of the oven for 30 minutes, basting every 10 minutes to prevent the pork from drying out.
  5. Serve hot sprinkled with the parsley. Serve with 1 yellow Portion Pot (100g) mashed sweet potato per person and unlimited additional fresh veegtables (excluding potatoes).

Tips

Place the apple quarters in salted water to prevent them from discolouring before cooking.
