Apple-stuffed pork fillet

Ingredients
- 450g lean pork fillet
- 2 eating apples, cored and diced
- 120g Quark soft cheese
- 1 tbsp chopped fresh sage
- 1 garlic clove, crushed
- 2 slices (50g) Parma ham
- salt and freshly ground black pepper
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Remove all visible fat from the pork and place the pork on a chopping board. Using a sharp knife, cut the fillet down the centre but not all the way through. Open up the pork into a flat piece of meat.
- Mix together the apple, Quark, sage and garlic and season with salt and black pepper. Spread the mixture over the pork, then roll up the pork and wrap the Parma ham around the fillet and place in a non-stick roasting tray.
- Roast in the oven for 30 minutes until cooked through.
- When the pork is cooked, carve into slices and serve with 150g boiled new potatoes (with skins) per person and unlimited vegetables.
