Ingredients
- 3 turkey rashers
- 3 eggs
- 1 tbsp semi-skimmed milk
- salt and freshly ground black pepper
Cooking Instructions
- Cut the turkey rashers into strips.
- Beat the eggs with the milk and season with salt and black pepper.
- Heat a non-stick frying pan and dry-fry the turkey for 1 minute before adding the beaten eggs. Move the mixture around with a wooden spoon until set.
- Spoon on to plates and serve with fresh tomatoes.
Tips
As a variation, use half turkey and half lean bacon or substitute smoked salmon.
