Ingredients

  • 3 turkey rashers
  • 3 eggs
  • 1 tbsp semi-skimmed milk
  • salt and freshly ground black pepper

Cooking Instructions

  1. Cut the turkey rashers into strips.
  2. Beat the eggs with the milk and season with salt and black pepper.
  3. Heat a non-stick frying pan and dry-fry the turkey for 1 minute before adding the beaten eggs. Move the mixture around with a wooden spoon until set.
  4. Spoon on to plates and serve with fresh tomatoes.

Tips

As a variation, use half turkey and half lean bacon or substitute smoked salmon.
