Ingredients
- 2 crumpets
- 2 eggs
- 50g extra light cream cheese
- 1 tsp white wine vinegar
- 1 tsp lime juice
- salt and freshly ground black pepper, to taste
Cooking Instructions
- Toast the crumpets on both sides.
- Meanwhile, poach the eggs in a pan of lightly salted water. When the eggs are cooked to your liking, spread a little cheese on each crumpet, reserving some for the sauce.
- Place the remaining cream cheese in a small saucepan and add the vinegar and lime juice and enough boiling water to make a creamy sauce.
- Place the crumpets on serving plates, top each one with a poached egg and then drizzle the sauce over the top. Sprinkle with black pepper and serve.
